ICED TEA SEASON IS HEEEERE!

I either grow, pick or buy nettle and mint, which are extremely resilient and easy to grow, each year and depending how much I’m dealing with I dry some to keep in jars.
For this ice tea I took a big sprig of each and tossed them into water that I had just boiled in a medium pot with a large knob of peeled ginger root in it.
Ginger and nettle are nice immune boosters, and will hopefully make up for complete and utter nice weather sleep deprivation that we should all strive to suffer through each year during ice tea season.
Add a spoonful or two maple syrup as a sweetner and some squeezes of lemon if you like it more like traditional ice tea.
Cool in a glass container/fancy jug/jar in the fridge and drink up.
Tastes like a fresh breeze on a warm day :)
