white bean and kale stew

  • a little extra virgin olive oil (about 2-3tbsp)
  • 1 onion ( i like to to use 2 of the smaller ones)
  • 3 cloves of garlic
  • 2 celery stalks, diced pretty small
  • 2 organic carrots, diced
  • fresh ground pepper and sea salt
  • a big can of whole tomatoes (keep the juice because we are going to be using it)
  • 1/2pound of small potatoes, diced
  • a big can of white beans (drain then wash them)
  • 1 lb of kale torn into smaller pieces
  • a handful of diced up turnips
  • Heat the oil in a larger pot….add your onions, garlic, carrots and celery…add a little salt (that’s how the flavors stay reserved).
  • Cook the veggies until a little tender.
  • Turn the heat up and put in the whole tomatoes with the juice…add the potatoes, beans, turnips and about 5cups of water
  • bring to a boil then turn down to simmer until potatoes are cooked…about 10minutes
  • now its time to throw in the kale….cook for about 2 minutes….season and there ya go.

SWEET POTATO LENTIL SOUP

2 cans of cooked green ( brown? they look brown to me… ) lentils
1 large sweet potato 
2 cloves garlic
2 onions (i used a half a cabbage because I was out of onions)
a heaping teaspoon of both rosemary and thyme (dried or fresh) and some turmeric if you have it
some veg broth or a couple bouillon cubes and a spoonful of miso if you have some kickinit in your fridge like you should!
 any oil
*secret ingredients a few tablespoons of something sweet and pinch of something spicy!
start by chopping the onions and throw them in a big pot on medium heat with some oil
then while that is sizzling with the cap on the pot, chop the sweet potato into chunks and toss that in with the spices
chop everything else ( now add cabbage if you like ) and add to pot along with cooked lentils and a few cups of water
now let everything cook on medium heat for a bit until it boils for a minute, then reduce the heat to minimum and let it sit until everything soft and then some.
The ingredients don’t need long to cook but people like to let soups simmer.
Wait for a half hour or so, stirring here and there, and take off heat. You can’t overcook it unless you don’t stir it and it burns.
I use a hand-blender at this point to make it super smooth. A food processor and blender blender does the same except I do it right in the pot and so I reduce a dish to wash.
Now! the soup gets better with every passing hour and day until its bad.  
This recipe makes a fair amount so freeze some and give some to your neighbor for sure.
ps i use maple syrup from Bobcaygeon and a chili powder from Bangladesh.
Now eat!
